Fillet of Pork de Roquefort
In 1411 the French king signed a charter granting the inhabitants of Roquefort Sur Soulzon the monopoly of curing cheese as it had been done in the caves of the afore said village since time immemorial. A trio of medallions of pork fillet pan fried and topped with Roquefort sauce
